The olives are harvested exclusively by hand or by mechanical means, usually slightly in advance of ripening to obtain a fresh and fragrant oil and to enhance its typicality. The olives are transported immediately after harvesting in mills in the area and are milled within 6-12 hours from harvesting with a continuous integral process, "cold" extraction and immediate filtration.
