Pecorino in Vinaccia

Ingredients: sheep milk, rennet, salt

Packaging: 500g

Cheese made from sheep’s milk and aged 8-10 months, of which at least 2 in marc. The taste, savory and slightly spicy, fades into the characteristic vinous hints and persists on the palate. The paste, semi-hard, is amber, dry and crumbly and with small concentrations of amino acid crystals.
