Hard sheep cheese matured in a dry place for a minimum period of 12 months. The peculiarity of the cheese is given by the walnut leaves that completely wrap the shape in the last 30 days of maturation. The color of the paste is straw yellow and the rind is wrinkled. The taste is slightly salty and spicy.
