Pecorino di Picinisco represents for Lazio an important dairy product with very ancient origins. Raw milk cheese and raw pasta, it is curdled with rennet in lamb and kid paste and without addition of lactic ferments. The milk comes from sheep breeds of sopravissana, comisana, massese and their mestizos. Pecorino di Picinisco has a cylindrical shape, with flat faces, thin crust of yellow or brown yellow color. The paste has a compact structure or with light white or straw yellow holes. The taste goes from sweet to intense, tending towards spicy. The seasoning varies from a period of 30-60 days.
