Hard sheep cheese that, after a careful traditional production process, is aged in dry rooms for a minimum period of 12 months. The peculiarity of the product is given by the manual treatments (massages) to which it is subjected, with oil and fireplace ash, after the first 40-45 days of maturation. The colour of the paste is straw yellow and the rind is wrinkled, dry and oily. The taste goes from slightly salty to spicy, depending on the degree of seasoning.
