Produced with raw mixed milk it becomes a raw cheese and vegetable rennet. It has a yellowish crust, the taste is intense, not salty, slightly bitter. Fresh marzolina can also be flavored in an oil bath with aromas or preserved in flavored oil for 3-6 months. The product is included in the official list of traditional products of the Lazio region.
